芋头切条状,大小要均匀,和油炸时间长短息息相关。糖的多少视乎个人喜好。喜甜就多点,不喜就少点,记得慢火熬制,等它融化就是。

    Step 1

    芋头去皮,切拇指头长条狀。芋头不能用水冲洗以免生水而影响口感。Peel the yam and cut into long strips. Yam cannot be washed to avoid affect the taste.

    Step 2

    大火热油,把芋头炸金黄色沥干油备用。Heat the oil over high heat, fry the yam to golden brown and drain the oil for later use.

    Step 3

    白糖加入盖过⅓的清水,小火煮开。Add sugar to cover ⅓ of the water and bring to a boil over low heat.

    Step 4

    要注意搅拌白糖水,一直到起泡后关火。Pay attention to stirring the sugar until it bubbles and turn off the heat.

    Step 5

    把芋头回锅,动作快手的搅拌兜炒至浓稠狀粘上芋头即可。Return the yam to the pot, stir-fry quickly until thick and stick to the yam.
